Italian Sausage Spinach Salad with Pesto, Tomatoes and Mozzarella

Ingredients

  • 1 pound Cantella’s Mild Italian Sausage
  •  Olive Oil
  • 4 cups Baby Spinach washed, and stems removed
  • 1lb. assorted Cherry Tomatoes cut into halves
  • 1 lb. Fresh Mozzarella Balls removed from water
  • 2/3 cup Basil Pesto (Purchase your favorite brand at your local store)
  • 2 tbsp Lemon Juice freshly squeezed
  • Salt and Pepper to taste

Directions

  • Coat the frying pan with olive and cook the sausage over medium- high heat for 18-20 minutes turning occasionally. Cook to 165.
  • While the sausage is being cooked, in a large salad bowl combine spinach, tomatoes, mozzarella, pesto and lemon juice.
  • Once the sausage is cooked, cut into round slices, add the sausage to the salad bowl and quickly toss with the rest of ingredients, as well as a bit of salt and pepper.
