Grilled Bratwurst with Summer Vegetables

Ingredients

  • 1 pound of Cantella’s Fresh Bratwurst Sausage
  •  2 Medium Zucchini
  •  2 Medium Yellow Squash
  •  Olive Oil
  • 2 Cloves Garlic, Minced
  • 2 tsp Tajin Seasoning
  • 2 tsp Fresh Parsley, Minced

Directions

  • Preheat oven to 350
  • Slice the zucchini and yellow squash into ½ inch rounds set aside
  • In a large bowl, combine the olive oil, garlic and tajin seasoning. Mix well.
  • Add the zucchini and squash into the olive oil mixture and toss well to coat everything.
  • Lay on a baking sheet in one layer and roast for 30 minutes.
  • Grill the sausage over medium- high heat for 18-20 minutes turning occasionally. Cook to 165.
  • Once Cooked place the zucchini and squash on a serving platter and top with the cooked bratwurst links.
  • Sprinkle with Fresh Parsley.
