Chorizo Breakfast Burritos

Ingredients

  • Olive Oil
  • Vegetable Oil
  • 1 pound of Cantella’s Pork Chorizo
  • 2 cups of Prepared Diced Potatoes (store bought)
  • 1 Cup Red Onions (chopped)
  • 6 Large Eggs
  • 5 Large Flour Tortillas
  • 1 ½ Cups of Shredded Colby Jack Cheese
  • ½ cup Green Onion (chopped)
  • Optional Ingredients (Avocado and Salsa)

Directions

Step 1

Cook Potatoes per the instructions on the package.

Step 2

Coat a large frying pan with olive oil add the pork chorizo cook over a medium -high heat, until fully cooked and crumbled. Add onions continue cooking, stirring occasionally, until onions are tender.

Step 3

Beat eggs in a medium bowl and scramble until done.

Step 4

Place tortillas on a microwave safe plate and cover with a wet paper towel.  Heat in the microwave for 45 seconds.   In the middle of the tortilla, layer eggs, chorizo mix, potatoes, colby jack cheese and green onion.  Fold in the middle sides, then roll one side and tuck and roll.
